吃貨開伙 · 全麥肉桂優格蘋果蛋糕 Whole Wheat Spiced Apple Cake


清冰箱的烘焙時間。新鮮蘋果丁搭配希臘優格與全麥麵粉,清爽健康又不過甜,熱熱的蛋糕好想佐一球香草冰淇淋啊! 上週日在Subiaco Station Market收攤前的清倉拍賣,貪小便宜買了一袋十來顆的Pink Lady小蘋果(才一塊錢能不買嗎?)努力吃了幾天怕不早點解決它們會不新鮮,也想順便消耗用不完的植物油和全麥麵粉,於是動手做了個蛋糕用光這些食材。

其實,做這蘋果蛋糕的動機只是為了清冰箱,所以沒有完全照參考食譜走。原本使用青蘋果,我用的是小型的紅蘋果;因為沒有環狀蛋糕模,改用烤布朗尼的淺烤盤;以兩倍的泡打粉代替小蘇打等⋯⋯被我胡亂改了一通後總算是實驗成功!

Last weekend have bought some Pink Lady from the Subiaco Station Market sale (the famous $1 bag), but could not finish the whole bag of apple shortly, so tried  to make a cake before them getting worse, also wanted to empty my cupboard before I move out.

But I don't have all the in ingredients and tools on that recipe which i found online, so I have changed many thing items; like I used Pink Lady to replace Granny Smith, used double baking powder instead the baking soda, etc. Fortunately it works in the end, even came with a good result!


[材料 Ingredients]


砂糖 Sugar 2杯(cup)
麵粉 Plain flour 1杯(cup)
全麥麵粉 Whole wheat flour 1杯(cup)
肉桂粉 Cinnamon poeder 4茶匙(tsp)
鹽 Salt 1茶匙(tsp)
泡打粉 Baking powder 4茶匙(tsp)
蛋 Egg 2顆
植物油 Vegetable 1杯(cup)
柳橙汁 Orange juice 1/4杯(cup)
希臘優格 Greek yogurt 1杯(cup)
蘋果丁 4杯(約四到五顆蘋果,去皮、去核後切丁)
4 cups apple cubes(4 to 6 apples, cored, peeled and chopped)

[作法 Method]


1. 將烤箱預熱至攝氏160度(上火加風扇),烤盤上油或鋪烘焙紙。
Preheat oven to 160℃; prepare the pan and cooking spray.

2. 準備一個大碗,將乾性材料(粉類)混合後備用。
A large bowl combine dry ingredients and set aside

3. 另準備一個碗將蛋打到發泡後(約三、四分鐘),加入植物油、柳橙汁與優格拌勻。
A medium-size bowl, whip eggs until frothy (3-4 minutes); add oil, orange juice, and yogurt. mix together.

4. 將乾、濕材料混合均勻後,並加入蘋果丁。
Add wet ingredients to dry ingredients and fold together until well combined, then pour batter into cake pan.

5. 如用淺烤盤以160度烤30~40分鐘,確認熟透即可。
Bake for 30 to 40 minutes if use a flat pan.

6. 放涼後從烤盤取出切片,可搭配冰淇淋或冰優格一起享用。
Let cool before removing from pan; serve warm with ice cream or frozen yogurt.
