
零失敗!材料、做法超簡單的全素麵包,低糖、低脂當早餐好健康。
前陣子買的特價香蕉已熟透發黑,打成Smoothie也喝到膩了⋯⋯最近開伙都走偽素食者的路線,剛好在BBC Food上看到這款無蛋香蕉麵包,我改用全麥麵粉去做多了點風味,再加上Muesli的點綴,賣像跟滋味都不錯吶!下次要試試加黑糖或用椰油版本~A light, low fat vegan bread, suit for breakfast or tea.
Those banana I have got from the sale couple days ago, now could not be any ripper, but I felt sick to drinking banana smoothie everyday, so I tried to find a different way to get rid off them. Then I found this vegan bread from BBC Food, have changed the recipe to use Whole wheat flour, and use the muesli for ganash, actually it was easy to make and looks & tastes nice! Next time gonna try to use brown sugar and coconut oil.[材料 Ingredients]
全麥麵粉 Whole-wheat flour 225克(g)
泡打粉 Baking powder 3茶匙(tsp)
粗砂糖 Raw sugar 100公克(g)
肉桂粉 Cinnamon powder 3茶匙(tsp)
大型熟香蕉 Large ripe bananas 3支
植物油 Vegetable oil 75公克(g)
裝飾用果乾、燕麥 Muesli for gnash
[作法 Method]
1. 烤箱預熱至攝氏200度。
Pre-heat oven to 200 degrees Celsius.
2. 香蕉去皮後用叉子壓碎,並與植物油、砂糖混合。
Mash the peeled bananas with a fork. Mix well with oil and sugar.
3. 加入麵粉、泡打粉與肉桂粉等乾性材料後拌勻。
Add the flour, baking powder and cinnamon, and combine well, then add any additional ingredients.
4. 吐司模上油或或鋪盤紙後倒入材料,烤20鐘後檢查熟度(若沒熟怕蛋糕焦黃可蓋上鋁箔紙);視情況最多再烤40分鐘。
Baked in a greased loaf tin for 20 minutes before checking(Cover with foil if the cake is browning); bake for another 40 minutes (approximately).
5. 待涼後脫模切片,冷藏一天味道更濃。
Allow to cool a little before slicing.
